~Happy Thanksgiving~


There are so many things that I'm thankful this year. My health,family,friends,job but most importantly my kids. They are the light of my life. They make me smile and laugh everyday. Life can't get any better then this!!

~Mexican Chicken Breast~

I didn't get a pic of this recipe, but I wish I would have. It was so yummy the whole family liked it. It's also so easy to make. This would also be good to make and just cut up the chicken and put in a salad.


1 pkg Taco Seasoning
4 (4oz) chicken breast
1 cup salsa
1/4 cup non-fat sour cream

Put chicken & taco seasoning in a plastic bag; shake and coat well. Place in baking pan that has been sprayed with cooking spray. Bake 30 mins at 375 degrees. Top with salsa bake another 5 mins. Top with sour cream.

~New Orleans Red Beans and Rice~


3/4 cup quick-cooking brown rice
1 1/2 tablespoons extra virgin olive oil
2 celery stalks, chopped
1 onion chopped
1 green bell pepper, seeded and chopped
3 garlic cloves, minced
1 teaspoon chili powder
1 teaspoon paprika
1/2 teaspoon ground cumin
1 (14 1/2 oz) can diced tomatoes with basil, garlic, oregano
1 ( 15 1/2 oz) can red kidney beans, rinsed and drained

1. Prepare the rice according to the package directions, omitting the fat; keep warm

2. Heat the oil in a large nonstick skillet over med-high heat. Add the celery, onion,bell pepper,garlic,chili powder,paprika,and cumin; cook stirring frequently, until the vegetables start to soften, about 5 mins. Add the tomatoes and bring to a boil. Reduce the heat and simmer, uncovered, until slightly thickened, about 4 mins. Add the beans and simmer until heater through, about 2 mins. Serve with the rice.

~BT Chicken and Corn Chowder~


6 scallions sliced (keep white and green parts separate)
4 slices turkey bacon diced
3 cups fat-free milk
2 tablespoons flour
1 Yukon Gold potato peeled and diced (about 1 cup)
2 cups frozen corn kernels
1/2 teaspoon dried thyme
1/2 teaspoon salt
1 1/2 cups cubed cooked chicken breast
1 cup diced tomato


1. Spray a large nonstick saucepan with nonstick spray and set over med-high heat. Add the white parts of the scallions and the bacon. Cook, stirring occasionally, until the scallions are softened and the bacon is lightly browned, about 3 mins. Meanwhile, whisk the milk and flour in a bowl until blended.

2. Stir the milk mixture, potato,corn, thyme, and salt into the saucepan; bring to a boil over high heat. Reduce the heat and simmer until the potatoes are tender , about 5 mins.

3. Stir in the chicken, half of the remaining scallions, and 1/2 cup of tomato's; heat through, about 2 mins. Serve the soup sprinkled with the remaining scallions and tomato.

This was very yummy and filling.

~Diet Time Again~

It's time again for me to get back on a diet. After having Sadie I just kept eatinf like normal. I never was one of those I'm eating for 2 when I was pregnant with her I just ate like I did before and only gained 10lbs. But since I've had her I've packed on 10 more lbs. So back on the band wagon I go. I've been doing it now for a little over 2 weeks and have lost almost 10lbs. I'm doing Weight Watchers because it worked for be before and I can still have those things I love. So I thought if I came along a yummy recipe I would share it with everyone. So you will see blog with yummy recipes that everyone will love.

~Great Target Deal~

So I sent the hubby to Target today to exchange our new Brita Water jug. The one we got last night was leaking all over our refrigerator..what a mess. Anyways I saw in the newspaper coupons this morning that they had a Target $4.00 off Schick Razors. Since I get 2 newspapers on Sunday I got 2 coupons. I also had some manufacturer coupons for the same item and since Target allows you to stack coupons we got this great deal. Target had these on sale this week for $6.99ea. So I got one and the hubby got one. He also got some baby wipes which I had a .50 off coupon. SO for all 3 of these it cost us just .70 cents. They really should have owed us .53 cents but they don't give money back and they told my husband they would have to charge him tax...hey I was happy...we got another great deal. I also had him to some pricing because I may have another great deal coming.

~Double Coupon at Kmart~


So Sadie and I headed over to Kmart for our last double coupon of the year. I really didn't have a plan this time. I thought I would just see kind of bargains I could get. Well this is that I got.

3 Huggies diapers $9.99 had 3 $1.50 off doubles to $3.00 (cashier didn't scan these coupons)
2 Wet Ones wipes $2.29 had 2 $1.00 off doubles to $2.00 final price .29ea
Axe shower Gel $4.49 had a $1.50 off doubled to $3.00 final price $1.49
L.A. Looks Hair Gel $2.19 had a $1.00 off doubled to $2.00 final price .19
Dawn Dish Soap $2.99 had a $1.00 off doubled to $2.00 final price .99
2 Rimmel Mascara $3.29 ea had 2 $2.00 off doubled to $3.29 final price FREE for both.

I also had 1 coupon for $5.00 if my total was over 50.00 which it was.

So my final price was $35.00. Which I thought was still really good. But what I didn't realize until I came home and was talking to my husband about it is that the cashier never used my 3 $1.50 off which would have been doubled to $3.00 off adding up to $9.00 off the diapers. So it would have been even cheaper then 35.00. I also had a fussy baby with me so I didn't get to add up my totals. Oh well...it was still a good deal!!

~Austin's 1st Concert~

Last week we took Austin to his very first concert. We went to see his fave group Green Day. James and I both also like the group. We all had a blast and I must say it was one of the best concerts I've been to. It was even better then New Kids. Austin was so excited he said he can't wait til they go on tour next year.

~Just a Few More Pics~




~5 MOnths Old~

So Sadie is now 5 months old and getting so big. We started her on cereal and we are now giving her stage 1 baby food. She loves her cereal and so far she loves bananas, sweet potatoes, pears and that's about it. She didn't care for applesauce,peaches, carrots or green beans. We will try those again later to see if she likes them. She is also moving all over the place. No crawling yet but she moves from her back to her tummy all the time...she makes all kinds of noises and laughs like crazy. She is a very good baby. I think she's easier now then she was as a newborn. She sleeps well at night and loves being around her brother, daddy and her doggies.

~Happy 4th of July~

We had a great 4th of July. We spent it with some great friends and had a blast. Sadie was a really good girl and loved showing off her cute dress...well it was cute for about 15 mins (she spit up all over it..lol). It was a great day with great weather and good friends. Thanks Brook & Scott for having us over!!





~Some Gold Sox Fun~

As you know I like free things so when we got these free tickets to the Gold Sox game I couldn't pass that up. We ended up taking one of Austin's friends Blake and his sister Madison (I call her my BFF..lol). We had a great time and really enjoyed taking all of them. Sadie was very good and was even good when they did the fireworks. What was really neat was that Urijah Faber was there. Yeah I'm sure your like WHO? I was the same way but I guess he's some Mixed Martial Artist and former World Extreme Cagefighting featherweight champion that a lot of people like. So they boys took their picture with him. We had a good time.

~Happy Birthday Dad~

Today June 14th is my dad's b-day. He would have been 64 years old today. I miss him each and everyday. I wish he would have been able to see how much Austin has grown into a young man. I'll never forget that he use to call Austin "Houston" and "Conrad"..Houston was because I named him Austin and it's another state in Texas and Conrad because we lived in Germany when Austin was little. He was always coming up with silly things to say. I know he would have loved Sadie to pieces and I'm sure he would have had many names for her. He would have been very proud of the things I've gone in my life and the things I have accomplished. I know that he's in a better place and watching over us now. I see signs all the time that prove that. We love and miss you Dad and Grandpa!!
